jambalaya

i had a couple of roommates in college from new orleans. we took turns cooking our favorite family recipes. i loved this homestyle jambalaya. nothing fancy.

ingredients:
3 to 4 celery stalks (chopped)
1 bell pepper (chopped)
1 large onion (chopped)
3 to 4 cups of cubed chicken
1 beef kielbasa sausage
2 cups instant rice
2 cans of chicken broth
1 can tomato sauce
pepper
creole seasoning (usually has salt in it)
garlic

how to:
simmer chicken & sausage in large pot until close to done. add onion, pepper & celery. season with pepper, garlic & creole & let simmer 5 to 10 minutes. add rice with broth & tomato sauce. season again & stir. bring to boil then remove from heat. let stand covered for 10 minutes. uncover, return to medium heat & stir to desired consistency (i like mine thick, not watery at all).

we always ate this with corn, & french bread. it's a yummy combination. & count on leftovers, it is always better the next day!
